Easy riccota spinach stuffed chicken

Today my Aunt/ roommate told me we were having one of her friends into town for the night and asked if I would like to make dinner for them, can you guess my answer?
It was a "YES!"
While browsing the blogs I love to follow I found this simple easy recipe and tweaked it just a little and YUMMY!!

You'll need;
2 cup of low fat ricotta cheese

A Good handful of baby spinach, chopped

A Good handful of grape tomatoes, halved

1/4 cup Parmesan cheese, grated

1 tbsp spice mix, I like Mrs. Dash

1Tbsp lime juice

1 clove of garlic, minced

Sea salt and freshly cracked pepper, to taste

Dash of oregano

4 chicken breasts

Bread crumbs

2 tsp olive oil

1/2 cup plain Greek yogurt


First things first, mix together: spinach, tomato, garlic, Mrs. Dash, lime juice, Parmesan, Ricotta cheese, and Oregano in a small-medium sized bowl.

Preheat your oven to 400'
After that is done bring out your chicken breast and slice them down the middle side so they become a little pocket, and STUFF those babies with our Ricotta mixture! And we are going to just secure them with some toothpicks along the edge, but dont forget to take them out when you are done cooking!!!

In a seperate bowl dump your bread crumbs and in another bowl put the yogurt.
We are going to coat the chicken in the yogurt and then bathe it in bread cumbs, until fully covered, yummmm.

Alright now we are going to pan sear the chicken in an oven proof skillet lightly coated in oil (I like to use my cast iron skillet.) /For about 2-3 minutes then flip and send them straight to the oven for 20-25 be sure the chicken is no longer pink.
Let the meat take a little break and rest for 5 minutes before serving.

Subway Orchard Chicken Salad, hommmade!

Recently subway stopped making the Orchard Chicken Salad sandwhich and my Grandma was heart broken! So for the love of old people I made her some homestyle and it is delicous!
Let me know how it goes!
You'll need:
  • 1/2 cup greek yogurt
  • 2 Tablespoons light mayo
  • 2 teaspoons orange juice
  • 1/2 teaspoon sugar
  • 1 cup cubed chicken
  • 1/2 cup diced celery
  • 1 cup chopped apple
  • 1/2 cup craisin
  • 1/2 cup grapes

  • Mix together the yogurt, mayo, orange juice, and sugar in a small bowl, stir until smooth
    Next add in the rest of the ingredients
                                                  Stir until well mixed
                                                  Cover and chill for two hours.
    Put onto a delicous fresh roll feel free to add the fresh veggies as if you were at subway and ENJOY!
